Buntong Cheong Kee Wan Tan Mee 文冬新村祥记云吞面

You should be able to notice that Chinese cabbage 菜心 was being replaced with bean sprouts.
Ipoh is famous for succulent bean sprouts. Bean sprouts in Buntong are more succulent due to the water quality. So, any food in Ipoh like 鸡丝河粉 Chicken slice Hor Fun, 咖哩面 Curry Mee, or even 河嘻Hor Hee, that uses bean sprouts will have their popularity.

It's a family business. They have been selling for a few decades. Many many years ago, when Mr Chan and his father started selling Wan Tan Mee on a cart, they used Chinese cabbages. They replaced Chinese cabbages with bean sprouts in 1969 due to the popularity succulence of bean sprouts in Ipoh.

After you have tasted Mr Chan's Wan Tan mee, you'll definitely find out that replacing Chinese cabbages with bean sprouts is no accidental. Their Wan Tan mee very different from the traditional Wan Tan Mee. Barbecued pork 叉烧 was replaced with flavoured chicken slices and this added saltiness to the homemade noodle.
